Christmas popcakes

Hi beautiful people

I know it’s mid December already, but my excitement for the festive season is only starting now. Yes, I know I’m a bit delayed, lol. But enough about me.

Thinking of what to bake for Christmas day? How about popcakes, the recipe is quite easy. I’ve added some decoration ideas as well. Enjoy.

  • 1 23×23 cm vanilla sponge cake
  • 60 g butter
  • 2 cup icing sugar
  • 2 Tbs milk
  • 400 g chocolate
  • sprinkles/nuts/anything you can think of for decoration
  • 20 lollipop sticks/mini candy canes

Trim about 1cm off each side of the cake, discarding the ‘crusts’. Now crumble the cake into fine crumbs in a large mixing bowl.

With an electric mixer, mix the butter, icing sugar and milk together to form a buttercream.

Spoon the buttercream into the mixing bowl with the cake, and mix together with a wooden spoon.

Roll mixture into balls about 2cm in diameter. Lay them on a tray and insert the lollipop sticks/mini candy canes.

Freeze cake balls for about ten minutes.

And voila!

Below are a few decoration ideas.

Till next time
